Đậu nành lên men có ngon không?
Đậy nành lên men hay còn gọi là natto đây là một món ăn truyền thống của người Nhật có giá trị dinh dưỡng cao. Natto được làm từ đậu nành nguyên hạt chế biến bằng cách lên men ở điều kiện thích hợp giúp chuyển hóa các enzyme, bổ xung vi khuẩn có lợi cho đường tiêu hoá.
Sau quá trình ủ lên men, đậu nành trở nên nhớt nháp, kết dính với nhau bằng những sợi tơ giống như tơ nhện và có mùi rất mạnh, màu nâu nhạt, vị bùi. Mùi của natto rất khó chịu với người không quen nhưng một khi đã ăn quen sẽ có thể sẽ nghiện với món ăn truyền thống của người Nhật này đấy nhé!
Đậu nành lên men thường được sử dụng để ăn với cơm trắng rất ngon, cơm nóng, nước tương, rong biển phơi khô và trứng gà sống kết hợp với natto quả là món ăn tuyệt hảo cho sức khỏe của bạn và những người thân yêu. Món ăn này ngoài ăn kèm với cơm, còn có thể nấu thành súp, làm nhân sushi cuộn và nước dùng của mì Soba. Natto hữu cơ có công dụng làm tan cục máu đông, hạn chế bệnh tim mạch, giúp phòng chống bệnh cảm cúm, ngộ độc thức ăn (kiết lỵ, tiêu chảy cấp..), làm chắc xương, tiêu diệt vi trùng gây bệnh và tất nhiên đây là siêu thực phẩm giúp bảo vệ sức khỏe của gia đình bạn đấy nhé!
Cách làm đậu nành lên men đơn giản tại nhà
Nguyên liệu:
– Đậu tương: 0,5 kg (chọn loại hạt nhỏ)
– Đậu tương lên men đóng hộp: 1 thìa canh khoảng 15gr (mua tại các siêu thị)
– Giấy nhôm
– Hộp xốp
– Nồi sứ hoặc thủy tinh dày
Cách làm đậu tương lên men:
Bước 1:
– Đậu để nguyên vỏ, vo sạch, bỏ hạt lép, vỡ.
– Cho đậu vào nồi áp suất, đổ nước ngập mặt đậu, ninh trong 45 phút rồi vớt đậu ra rá, để ráo.
– Trộn đậu tương lên men đóng hộp vào nước ninh đậu thành hỗn hợp sền sệt.
– Cho tiếp đậu đã ninh chín vào hỗn hợp trên, trộn thật đều.
Bước 2:
– Chuẩn bị một chiếc nồi sứ hoặc nồi thủy tinh dày, đổ đậu tương vào nồi, san đều ra. Chú ý không để lớp đậu chồng lên nhau quá dày, đậu sẽ không hút được oxy để lên men.
– Lấy giấy nhôm bọc kín nồi, chọc vài lỗ nhỏ để thông hơi. Dùng giấy nhôm sẽ giúp phần đậu trên cùng không bị khô.
– Tìm hộp xốp sạch, cho nồi đậu vào trong, dùng túi sưởi nóng hoặc đèn sợi tóc chiếu sáng để giữ nhiệt độ trong hộp khoảng 40 độ C, ủ đậu trong 15 – 20 tiếng.
Bước 3:
– Sau khi ủ, bạn lấy đậu ra khỏi hộp xốp, thấy đậu chuyển màu nâu, có độ dính cao có thể kéo thành sợi dài, mùi nồng khá khó chịu thì đậu đã lên men.
– Để đậu nguội tự nhiên khoảng một giờ, mùi hương lúc nãy dần bay đi hết rồi bọc kín lại hoặc cho vào hộp có nắp đậy, cho vào ngăn mát tủ lạnh khoảng 1 ngày. Lúc này quá trình lên men đã hoàn tất, đậu đạt đến mùi vị thơm ngon nhất. Bảo quản đậu trong ngăn mát tủ lạnh.
Đậu nành lên men tuy còn khá xa lạ với người Việt nhưng với cách làm dễ dàng và hàm lượng dinh dưỡng không hề nhỏ đặc biệt giúp tăng chiều cao hiệu quả, món đậu nành này là lựa chọn khá thú vị cho bạn khi muốn “đổi gió” cho thực đơn gia đình đấy nhé!
